Ingredientes:

  • 1 lata de leche evaporada
  • 4 onzas de leche de coco
  • 1 lata de crema de coco
  • ron a gusto (yo usé Bacardi Superior)

¡Salud!

With all the stress that comes with the holiday season, it’s not a good time to experiment in the kitchen with new recipes.

But, thank God, I broke that rule recently. The result was a concoction I hope to make every Christmas for years to come, coquito with espresso.

I went to a New Year’s Eve party at my tía’s and cousins’ house, and while Mami brought her own bottle of coquito, I, too, wanted to contribute something special and unique.

That’s how I ended up– with Papi acting as sous-chef– a bottle of coquito with espresso coffee.

It was a hit. Seriously, the bottle didn’t last long, and I had strangers complimenting me on that coquito all night. It’s true, I’m no domestic diva– I hardly cook– but when I get an idea, I just have to put it into action, and in this case, it paid off.

Since the Three Kings are on their way, I’m sharing this easy but surefire recipe, so that you can entertain the grown-ups at your Christmas party.

Ingredients:

  • 1 can of evaporated milk
  • 4 oz. of coconut milk
  • 1 can of cream of coconut
  • white rum to taste (I used Bacardi Superior)
  • ground cinnamon to taste
  • 2 shots of brewed espresso (I used my Keurig Platinum brewer and a French Dark Roast)

Directions:

In the blender, combine all the ingredients and blend until the coquito has a creamy consistency. Pour in an empty bottle.

Get ready for many compliments!

May the Three Kings bring you much happiness tomorrow and always! Cheers!
